Custom menus are where Kitchen Ops truly begins. We build menu plans around your crew, your delivery schedules, and the fridge and freezer space your camp actually has. Our Quantities are Dialled

Formulas are our secret sauce. We've worked out how much a hungry driller actually eats — and how to calculate the right amount of leftovers. The math is done. Our cooks just enter the numbers. No stress, and everyone gets their fill.

Specialty Equipment

Just because we're cooking in the bush doesn't mean we have to rough it. The right equipment can take a wall tent from suffocating to actually pleasant — and turn a tired dinner into something the crew talks about for days.

We've brought BBQs, propane pizza ovens, Traeger smokers, and ice machines into camps across the country. Every one of them earned its place. A roast beef dinner is not what a crew wants after a twelve-hour shift in thirty-degree heat — but pulled pork off the smoker, or pizza from the propane oven? That's morale. That's a meal worth showing up for.

The right kit makes the kitchen more efficient, the cooks less worn out, and the food a lot more interesting.

Doing our Part

In remote areas, dealing with waste is expensive and challenging. We aim to keep food waste low, single-use plastics to a minimum and have added compostable to-go containers to our supply inventory. 

We Come Prepared

Every Tilley Kitchen cook travels with a personal bin of secret-weapon ingredients — the red pesto paste, the five-spice, that little somethin' somethin' that most remote grocery suppliers don't usually carry. Because the difference between fine and really good is usually one ingredient. And we make sure that the ingredient makes it to camp. 

We Read the Room

We know there's no use having a Michelin menu when you're feeding hungry people in the bush. But that doesn't mean meals can't be star quality.   Check out some of our favourite dishes here.
